RECIPE BELOW! This healthy tuna salad is packed with heaps of good fat! I always buy tuna in springwater. I'm not scared of fat, but I am scared of the type of fat in some tuna. Tuna in oil is listed as an olive oil blend but nowhere on the packaging does it state what this "blend" is. That's why I always add my own oil! Serves - 1 Ingredients: -2 95 g tins of tuna -1/2 avocado, chopped -2 tbsp or 30 g extra virgin olive oil -1 tsp or 5 g capers, chopped roughly -1/2 tsp dried dill -juice from 1/2 lemon -pinch cracked pepper -pinch salt -2 tbsp or 30 g pepitas Method: -on a low heat, lightly toast the pepita seeds. Make sure you move them around in the saucepan to prevent them from burning. Don't have the heat too high - patience is the key! Toasting should take about 5 minutes -add the olive oil, lemon juice, pepper, salt, dill and capers to a small jar and shake vigorously to combine -add tuna, avocado and pepitas to a bowl and mix, then add the dressing and mix
